Begin with ground beef. Add Vegetables and Rice. Top with Nachos and Cheese and let the party begin. This is what we call a haystack. Just a word of Caution…These start small and grow big Very quickly.
It’s pretty much a fiesta right there on your plate. The foundation Gives it Substance. The middle gives it texture and the Cheese over the top gives it all that yummy cheesy flavor.

It’s easy to make and a great idea to serve large crowds. This can be healthy like a salad or a carb bowl Just like you’re at Chipotle. The Hamburger can be made ahead of time and warmed in the Crockpot Several hours before serving. After Chopping Vegetables, and Cooking Rice in the Instant Pot, Dinner is ready to serve.

Haystack
6lbs Fried Hamburger/ drain
1 Jar of Salsa
3 pkg taco seasoning
3 Cups Cooked Rice
2 large bags Nacho Cheese Chips/Crushed
Nacho Cheese Sauce
Topping Ideas:
Sunflower seeds
Green Olives
Chopped Lettuce
Diced Tomatoes
Diced Onions
Black Beans
Peppers/any color
Jalapenos
Salsa
Sour Cream
Ingredients
- Hamburger, Rice, Nacho Chips, Lettuce, Tomato, Onion, Green Olives, Black Beans, Sunflower Seeds, Salsa, Peppers, Nacho Cheese Sauce
Instructions
1. To prepare fry Ground Beef and drain. Add 1 jar of salsa and taco seasoning. This can be made ahead and warmed in a crockpot along with a cup of water a couple hours before serving.
2. Cook White Rice In Instant Pot On the Rice Setting.
3. Heat Nacho Cheese Sauce in Small Crock pot
4. Chop Up ingredients up to a day before.
5. When ready to serve set all ingredients on a buffet.
