When I think back on my childhood these creamy Caramels have to be on the top of the list of my favorite things.
My mom would only make them around Christmas which made them seem extra special. The texture and flavor of this sweet and chewy caramel make it one of my favorite candies for sure.
The Ingredients
To make the caramel there are four main ingredients.
- Sugar
- Corn Syrup
- Heavy Cream
- Butter
How to make the Caramel
Melt butter, Add Sugar, Corn Syrup, and half the cream.
Bring to a boil. Add the rest of the cream. Boil and stir until the mixture reaches 245 degrees on a candy thermometer. The consistency should look brown and start pulling slightly from the sides of the pan.
After the temperature reaches 245 stir in 1 tsp. vanilla. Quickly pour caramel into a buttered aluminum cookie sheet or bar pan baking stone. Sprinkle with sea salt. Allow to cool and cut into squares. Wrap Caramels with wax paper, twisting the ends to secure them.

Creamy Homemade Caramel
These creamy homemade caramels are a holiday tradition. Wrap them in wax paper or eat them straight from the pan.
Ingredients
- 2 Cups Sugar
- 2 Cups Heavy Cream
- 3/4 Cup Corn Syrup
- 1/2 Cup Butter
- 1 tsp vanilla
Instructions
- Melt butter, add sugar, corn syrup, and half of the cream.
- Bring to a boil
- Add the rest of the cream.
- Stir constantly until the temperature reaches 245 on the candy thermometer.
- Stir 1 tsp vanilla
- Pour into a buttered aluminum pan or baking stone bar pan.
- Sprinkle with sea salt
- Cool the Caramel and cut it into squares
- Wrap in wax paper squares
