How to can chicken

Would you like to learn how to can chicken? Today I am going to tell you how I have been canning chicken for over 2 decades.

Canning Chicken is truly so simple

I can’t believe how simple this is! Truly this is going to be so satisfying for you to attempt because of how simple and gratifying this is. Seeing premade chicken sitting on the pantry shelf is one of the most wonderful gifts you can give yourself this year.

How to begin

To begin you will want to wash your ball jars. You will need to buy rings and lids to fit the jars.

After your jars are cleaned, you can begin.

Buying the chicken

When chicken is on sale I buy 40-pound boxes of chicken. This will make approximately 20 quarts of canned meat when you are finished. We live in a community that has several large food distributers so sometimes when they run a sale I buy in bulk. But I love when I can find a local farmer selling fresh skinless, boneless chicken breast or tenders. I try to buy more than 40 pounds when I get a good deal.

The skinless, boneless breasts, or tenders, if small enough are ready to stuff into my canning jars. If the breasts are too large I cut them down a bit to stick them in the jars.

After I have the jar filled with chicken I sprinkle the top with just a bit of salt.

I wipe down the jar to make sure there is no more residue left on the top.

Next, I take the rings and lids and tighten them on the jar.

The Pressure Cooker

So many people express concern over using a pressure cooker. I get it. The pressure cookers in our mother’s and grandmother’s kitchens were often not safe and lots of accidents would occur. However, there has been much improvement through the years and the pressure cookers today are super safe if you follow the directions. The pressure cooker I use is The All American pressure cooker.

How long should I Cook the chicken

After The Chicken has cooked for 90 min at 15 pounds turn off your heat and let the pressure return to zero before opening your pressure cooker.

Carefully remove the chicken, and let it cool on the counter. I like to check and make sure the chicken is sealed before putting it away in the pantry. It’s no fun to find meat later that hasn’t sealed.

How to use the chicken

I love to have this meat on hand for so many different meals. Fajitas, Casseroles, soups, chicken salad, chicken, and noodles, just to name a few.
