When My kids were little I was always trying to make Mac and Cheese that didn’t come from a box. I mean, the competition is strong and It’s super hard to compete with that fake cheese taste. Seriously Though, I could never figure out why they would prefer that box flavor over a Homecooked, Creamy, Cheesy, pan of Mac and Cheese.
As they got older their tastes evolved too…all though I still can’t keep Kraft Mac and Cheese in the pantry without it quickly disappearing. They have come to enjoy this version of Mac and Cheese. So in our house, we call this, Grown-Up Mac and Cheese.
What is the Secret to Creamy Mac and Cheese
I have found the secret to creamy, cheesy mac and cheese is well of course, Cream and Cheese.
I use butter, cream, and real cheese to create this grown-up version of a kid favorite. It’s really not the best option if you are trying to eat low fat but every so often it is fun to indulge that little kid in us again. I often will prepare this along with another more health-conscious option like Brussel sprouts, broccoli, or green beans.
How do you make Creamy Mac and Cheese from Scratch
So let’s get started with this cheesy, creamy dish.
Boil 16 oz Macaroni noodles
In a separate pan melt 1/2 stick of butter, add 2 Cups Heavy Whipping Cream,(Or If I don’t have Cream Sometimes I substitute Evaporated Milk).
Next add your cheeses, 1 Cup Parmesan, 1 Cup Shredded white cheddar, 1/2 sharp yellow cheese spread (Soft Cheese), 1 Cup Monterey Jack. Add 1 TBSP Garlic Salt and pepper.
Let Simmer 10-15 minutes. Pour Cheese Sauce over Noodles. Spread in a 9x13in pan.
Sprinkle cheese over top and cover with cooked bacon bits if desired. Cover with Aluminum Foil and bake at 350 for 20 minutes or until golden and bubbly.
