It’s soup season and to kick of the first week of Autumn I celebrated by making one of my all time favorite soups. This just like Panera Bread Squash Soup is so delicious it’s like eating dessert for dinner.
I love comfort food this time of year and this soup brings me so much comfort. I always start to crave Panera Bread Squash soup and can’t get through the season without a bowl or two. So I decided I was going to try to make some at home and I think it’s a pretty close imitation.
To make this Squash soup
I like to buy butternut squash and cook it in the microwave for 8-10 minutes. Cooking it like this makes it so easy to cut in half and pull the seed out of the middle. After this I just cut off the outer layer and dice the squash into small pieces.
Heat up some olive oil in a skillet and sauté the onion. After the onion is translucent add in some minced garlic, cleaned carrot and squash. Cook the onion, garlic, carrot and squash to tender then transfer vegetables in Instant pot.
Two of the secret ingredients in this recipe is canned pineapple chunks and pumpkin.
In the instant pot add rest of ingredients, except the heavy cream. Cook on high for 12 minutes and then quick steam release.
In Ninja blender or with hand emulsifier blend all ingredients together until smooth.
After this transfer soup into large stockpot.
Stir in cream and simmer until bubbly.
That is it!
So easy right?!
Spoon into bowls and garnish with pumpkin seeds.

Delicious Squash Soup
Just like Panera Bread Squash soup
Ingredients
- 1 tbsp extra virgin olive oil
- 1 small yellow onion, diced
- 2 garlic cloves/minced
- 1 small butternut squash, cooked, peeled and diced
- 1 carrot peeled and diced
- 4 cups chicken broth
- 1 tbsp chicken stock powder
- 1 cup apple cider/ or apple juice
- 1 cup canned pineapple chunks( and juice)
- 1 tsp garlic powder
- 1/4 cup brown sugar
- 1/2 tsp cinnamon
- 1/2 tsp pumpkin spice
- 1/8 tsp cloves
- 1/8 tsp all spice
- 2 tbsp butter
- Save the cream for the end
- 2 cups heavy cream or half and half
- Toppings: roasted pumpkin seeds, fresh pepper
Instructions
- Add olive oil to large stock pot over medium high heat. Add diced onion and saute 2-3 minutes until translucent. Add minced garlic.
- Stir in diced squash, carrots.
- in instant pot, combine all ingredients except cream.
- Cook on high for 12 minutes, quick release.
- Blend all ingredients and pour back into stock pot. Add cream or half and half until desired consistency
- Spoon into bowls and garnish with pumpkin seeds.
Notes
Can substitute 1 apple for pineapple.
If not using instant pot,after sauteing vegtables combine all ingredients in stock pot and cook until tender.
