My History With Nutritious Homemade Bread
I grew up with a mother who often baked our bread. I loved it! Especially when it came straight from the oven. I promise you, if you Spread some Butter and Jelly over that steaming piece of bread, It tastes like home should feel. But of course, because I had the blessing of Homemade bread, I often didn’t appreciate what I had. So when my friend would pull out her white wonder bread at lunch I’d look over at her sandwich and preservative packed twinkie and offer a trade for my amazing handmade sandwich and pretzels.

But now, I’m super picky about when and how much bread I eat, so if I’m gonna indulge it’s gotta be the bread that’s Worth it. Years ago I was given this Delicious Bread Recipe and while it does include Flour, it also contains oats that pack the loaves full of extra fiber.
We Love Yeast Breads
As I was raising my own children I’ve used different yeast bread recipes. We especially love Dinner rolls, Pretzels, French bread, and Oatmeal Bread. I started making this simple Scratch Oatmeal bread almost a decade back. It’s a hearty bread but doesn’t taste real grainy, which was a win for my children. In fact, this past year when my daughter lived across the sea, it was one of the recipes she wanted to learn to make on her own. I think it’s plain, For us, there’s just something about bread that stirs up feelings of home.
How to make Delicious From Scratch Oatmeal Bread
This super quick and delicious recipe only requires a few hours of time and several ingredients.
- Quick Oats
- 1/2 Cup all purpose flour
- 1/2 Cup Brown Sugar ( Or Honey if you prefer)
- 2 TBSP Butter
- 1 TBSP Salt
- 1 TBSP ground Flax Seed
Next, Pour 2 C. Boiling water over ingredients. Cool to lukewarm. In a separate bowl dissolve 1 TBSP yeast into 1/2 Cup Warm Water. Let Proof, or wait till it starts to bubble. This allows you to see if the yeast is active. Add to Mixture. Stir in 4 1/2 Cups Bread Flour. Knead for 5 min. I throw this in my Bosch mixer and let it do the work for me. Let rise for 1-2 hours then punch down, shape into 2 loaves, grease pan, and let loaves rise above the pan. Bake at 350 for 30 min. Brush top with butter.
Let’s talk about Yeast
Many people tell me they get nervous if something calls for yeast. If you can identify with that feeling, this paragraph may help you feel more confident and realize yeast is not as scary as you may have originally thought.
Step 1.
The Water. It should be warm enough—ideally between 105º and 115º—to get the yeast going. If the water is too cool it will not allow the yeast to proof and so it will never activate. If the water is too hot it will kill the yeast and your bread will be super dense.
Step 2.
Be patient, and let the mixture stand for 5-10 minutes. This allows the yeast enough time to produce plenty of carbon dioxide. Once it’s nice and bubbly, it’s ready to add to your mixture.
Extra tip.
You may notice that some recipes don’t call for sugar in the proofing process, but adding a small amount of sugar, even a tsp, will actually help your yeast get nice and bubbly. If you prefer you could add honey or agave syrup instead of sugar.
Also.
If you notice that the yeast hasn’t bubbled much after 10 minutes, the yeast might be old. You can still use old yeast in a recipe, but it will take longer to rise. I prefer to store my yeast in my freezer to help with freshness and longevity. This could also be an indication that your water temp was wrong. Sometimes I add a shot of hot water to get those desired bubbles.

How to make Delicious and Nutritious Oatmeal Bread
This Delicious Bread makes 2 loaves and is wonderful for eating alone with butter and jelly or as a toasted cheese sandwich. It's a perfect pairing with soup on a cold or rainy day.
Ingredients
- 1 Cup Quick Oats
- 1/2 Cup Flour
- 1/2 Cup Brown Sugar or Honey
- 2 Tbsp Butter
- 2 Cup Water
- 1 Tbsp Salt
- 1 Tbsp Yeast
- 1/2 Cup Water
- 4 1/2 Cup Bread Flour
Instructions
- Mix the first 5 ingredients in a bowl
- Pour 2 C Boiling Water over all ingredients
- Cool to lukewarm
- Dissolve yeast in warm water in a separate bowl
- Add yeast and water mixture to first 5 ingredients
- Stir in 4 1/2 Cups Bread flour
- Knead in bowl 5 min.
- Cover and allow to rise until double in size
- Punch down and shape into 2 loaves
- Place in greased bread pans.
- Let rise until above the pan
- Bake at 350 for 30 min
- Butter top of the bread
